Ever since I switched to everlast 16oz gloves I've been getting knuckle injuries, what gloves are best for protection in heavy training? Or is there anything else I can do?
The best (I gather) are Winning and Grant, with Winning being the best all round. Assuming you're hurting your hands on the bag/pads, Rival RB10-d3o Intell-ishock Bag Gloves are, to my knowledge the best you can get in terms of protection excluding Grant and Winning. What I like also is that the large hand size are only 12oz but still offer really good protection, so you can work on your speed. I wouldn't be able to give a great deal of advice on sparring gloves as I still have a fairly shitty pair and hurt my hands with them fairly often. As an aside, there are a few things you can stick under your wraps - http://rivalboxing.eu/index.php/product/108/RFG as an example, I promise I'm not sponsored by Rival but that's the only example I could find. Alternatively, after you wrap your knuckles once, you could put some foam in and then wrap a couple times more and cross over the fingers assuming you wrap in that way.
Have you tried wrapping your hands better/different? Maybe save you some money if you are strapped for cash.
Everlast gloves are **** unless you get the real expensive ones. Maybe just try wrapping your hands differently. If not I would recommend any sort of rival gloves. In my experience the Everlats don't have a whole lot of protection and feel very flimsy so its easy few months and they are great. They offer just the right amount of protection and feel very comfortable.I have the Rival RS60V and I couldn't recommend them enough.

I have the same problem with sore knuckles with my Cleto Reyes 16oz training gloves. As mentioned above, getting some mexican style handwraps and wrapping your hands correctly will make a big difference. Since I have been wrapping my hands properly its much better. Failing that as mentioned above get yourself some Winning gloves if you have the money. I will probably get myself some winning also over the next few weeks.
