is there a 'normal/standard' size of gloves used in pro boxing (eg 12oz) or is this always a feature of negotiations and dependent on the boxers weight class?

Are there any boxers who are known to prefer/insist on a certain size?

I think it is actually 10oz from superwelter and up. I don't think glove weight is negotiable in a sanctioned fight.

    Isn't 147 and bellow 8oz while 154 and above 10oz?

But it can be negotiated to wear either at any weight class I think.
