He's right you never put eggs into a hot pan. To fry an egg put a small frying pan on a low heat, if you use gas just turn the knob down as low as it'll go, if you have an electric stove-don't bother, they're useless, either red hot or stone cold, have cereal instead-heat the pan for a minute or two and melt a fair bit of butter without allowing it to brown. To be honest frying an egg as it's done in the trade is more like poaching it so use quite a lot, break the egg into the pan, leave to cook gently until the albumin has solidified, spoon butter over the yoke a few times until it turns ever so slightly opaque. Not healthy, not practical/economical in the home but that's the chef's way.
