Personally, I watch it from one fighters perspective. So I'll focus on one fighter, which enables me to see what he's landing, what's hitting him. Is this how everybody does it?

I record all fights that I get to see. The first time I watch it, I watch for pure entertainment purposes, with the snacks and drinks and what not, screaming my head off for a knockout or good showing. Afterward, I go back, whether right away or a few hours later and watch the fight again. This time around, I pay more close attention to the fight. I break down the moves done by both fighters, and analyze how the fight is progressing. In the meantime, I score it for myself if I know it goes the distance.
often drunk also as most decent fights are on at like 4 in the morning over here at which point i've generally been out on the town for a few hours and are worse for wear!!

like judge, i always score the fights. makes it more interesting, to see what real ringside judges cards are. if the fight go to distance, if it not go to distance i still check the scorecards on boxrec.
I do the same thing, if the fight is really good I usually stand up (out of pure excitement) and cant sit down until the fight is over.
I *try* not to be biased towards one fighter and, instead, focus on technique and style clashes. I often find myself watching where only one of the fighter's landing, though. I'll avoid balancing out an actual answer with a snarky one, for once.
I try to watch it as unbiased and emotionally detached as possible. I try my hardest not to pick for I'm rooting for even though chances are I have a favorite in the event. Doing RBR on ESB has helped me a lot in that regard. Then I'll rewatch it afterwards as a fan of said fighter for the full effect.
