Just get in boxing shape and let your body weigh whatever it wants. Soccer players tend to be quite fit so it is likely that boxing shape for you will get you to a similar weight, possibly a bit lower. In any case you should not impose weight targets as it is a distraction which does little to improve your performance. Get you mind on improving your skills and don't worry about how big the guy in front of you is.
I'm 5"8 roughly. I fight at 151.8 (which is a very good weight for me). I'm in very good shape (run 5 miles a day) and I walk around at 156-158. I was around the weight of 164 and I was in decent shape. I would say average joe (I could do the police fitness test at 162). Take your fit body weight, and don't go too far down from it. When you cut alot of weight you may hit harder for your weight but your ability to take a punch goes down as well. Remember that. I think if you go by the AVERAGE builds in these heights, the weights apply 5"0-5"5 112 5"3-5"7 119lbs 5"5-5"8 125lbs 5"6-5"9 132lbs 5"7-5"10 141lbs 5"8-6"0 152lbs 5"10-6"1 165lbs 5"11-6"2 177lbs 6"0+ Heavyweight categories REMEMBER* amateur is different from pro, cutting alot of weight isn't necessarily the best thing to do since you fight VERY often and the weights are very forgiving to most body frames. Try and keep within 5-9 pounds of your fighting body weight.
These a universally accepted method of calculating ideal body weights for various heights called B.M.I. (body mass index). This is a non-boxing specific concept, but a reasonable guide none the less. There's plenty of info on the Net about it, and the numbers come out pretty close to what CFIZZL3 suggested in the post above.
