Do you think you can attribute the success of MMA/UFC in America because it usually ends quicker than other martial arts?

And also how do you explain it's relativley poor popularity outisde of North America? Should we be surprised that this Martial art, which usually gives the viewers what they want and very quickly has done very well in the fast food capital of the world but not so well elsewhere?

Not a bad analogy. But its success is because of its brutality. That's how the original UFC's were marketed on the basis of no holds barred combat.
The UFC though is popular in the US primarily because of Dana White's sales/marketing pitch and the demographic it appeals to. That said Zuffa had to "tone" down the UFC in order to make it legal in alot of states.
