Let's say that Jeffries refuses to rematch Jim Corbett, so instead Corbett arranges a fight with an up and coming heavyweight named Sam McVea. Corbett of the second Jeffries fight, vs the McVea that knocked out Denver Ed Martin. What happens?

Jeffries by moider. That water does get awful deep, doesn't it? Would be a bit later in the fight though, McVey isn't quitting for anyone.
After the second Jeffries fight ,McVey by stoppage.Corbett has no business in the ring with Jeffries in their second fight.
After a few rounds figuring Corbett's game, Sam bulldozes The Gentleman. One guy was on his way up to a glass ceiling, the other on the final descent from over-hyped heights. KO6
Poor Sam is mesmerized by Corbett's checks wiggling out of thirst leather thong and Jim takes advantage of Sam's momentary lack of focus to land a smashing combination on his chin. Down his McVea! Down goes Mcvea! But Sam struggles to his feet, barely making the count, and unleashes a tremendous right on the smug pantywaists chin. Corbett goes down, rolls over once, then expires. Sam tips off the thong from Corbetts body, and runs around the ring like Achilles did with Hector. It's all over by the 23rd round.
I chose a timeframe when the fight could have happened. Neither man would have been in their prime, but it would have been possible.

Corbett was totally washed up for the 2nd Jeffries fight.McVey would punch his lights out.Martin probably would too, though he himself had come of the boil.
Corbett UD. McVea can't box a lick in his prime. As a teenager, he had to be even worse. Jeffries was at his best for the 2nd Corbett match, and hurt Corbett early with a body shot in round two, taking the wind out of his sails.
Corbett had been retired for 3 years when he fought Jeffries the second time. Sharkey bounced a nearly 5 years younger Corbett around like a ball and Sailor Tom was a crude as guts when it came to boxing skills.McVey 20lbs heavier than Sharkey, would cut that old version of Corbett in half!
