The majority have it covered. I've said before that when it comes to matching up the great heavyweights, Joe is the last man that George should be allowed anywhere near. Lightning fast, metronomic hands both with KO and finishing power in them up against a wide-swinging slugger like Foreman? I like Joe by knockout.
I think my love for the Brown Bomber is in the same ballpark as yours, and I'm definitely on board with Louis beating Foreman...early KO just seems a step too far for me. Ali (admittedly, nowhere near the puncher/finisher Louis was) was only able to get rid of him after thoroughly exhausting him for half an hour in the jungle heat. Even then, George wasn't out cold - he was basically battered off his tired legs and couldn't put them back underneath him before the count of ten (not for lack of trying). Louis would be in right hand paradise, with his jab keeping a steady hi-hat beat on Foreman's nose. In addition to getting off first, he'd be landing combinations regularly - and his minimalist footwork would be plenty good enough to get out of the way before George could touch him back in any meaningful way. The punch stats would be very one-sided. I could see him bloodying Foreman, and maybe even a mercy referee stoppage. It would came late, though, if at all. My pick is Louis by wide UD.
Of course we all call fights wrong somtimes which is why we have to work for a living. You can talk in terms of one absolute however, and that is what you would do if you were managing either fighter. I can tell you absolutely that if I were Louis's manager I would be pushing for this fight, and possibly side stepping sombody like Gene Tunny at the same time. If I was Foremans manager then I wouldnt let him near Louis period, unless Louis held the title and there wasnt an alphabet belt that we could milk for a while. If I was wrong they would just have to sack me.
George has a punchers chance but not much else. If Foreman wins it would have to be by early KO. George would have to jump on Joe early and fast, kind of like he did with the other "Joe" to win the title. Foreman certainly has the power to stop Louis but he would have to use it early and quick. A boxing match favors Louis. A slugfest favors George.
