I think Norton is a bad matchup for Holyfield. Kenny was more of a boxer. He had the better defense, probably a little stronger than Holyfield. The key would be Kenny's jab.
Evander had trouble with the jab from Moorer to even Old Man Foreman couldn't miss him with their jabs.
Norton nullifies Holyfield offense, counters smartly, uses his awkward style to throw off Evander.
Tactical fight, but by the midrounds Kenny Norton walks him to a decision win.

I think you are underestimating Holyfield and I think that Holyfield would win, but you do also make good points. Holyfield had a decent punch but he wasn't really the heavy handed type that would pose the biggest danger to Norton. Holy would have to outbox him and not get drawn into loading up his shots as he sometimes did against guys that were his size.

I wouldn’t bet on either taking all 3, but I would bet on a great set of fights. Holyfield will try to push Norton back but I don’t think he can. I think Ken has better jab and will also hurt Evander to the body. Holyfield has some great combinations with serious power and a pretty rough and tumble infighting style Norton would not enjoy. Both guys could win on points and both could be stopped by accumulated damage.
Gun to my head might slightly favour Evander to win 2 of 3 but ….
