Amir Khan takes risks. This fight would be worrying for Khan's health potentially, as Amir is not fighting a guy with a welterweight frame anymore, but someone with a middleweight frame and comes in on fight night as a light heavyweight. Not only that, but Canelo is stronger at a bigger weight and his uppercuts are vicious. Amir is choosing to put on weight quickly, that's a risk.
I wonder if he makes that much more in this fight as he would against Brook (very doubtful), or just believes that a loss can be turned over to the "he was so much bigger, but I tried" thing so he can prevent too much loss of face, or even eventually still get the Brook payday after.
