It was on the undercard of Young Mitchell Vs Tom Cleary The San Francisco Examiner- 27 Jun 1888 (page 2) There was only one set-to as a preliminary to the contest of the evening. The appeareance of Frank Glover in the ring as referee for the set-to between Champion Jackson and Joe Choynsko was the signal for uproarious applause. He was recognised as the plucky little man who at the last assembly of the club made such a clever stand against Joe McAuliffe, the present heavy-weight champion of the Pacific Coast. The four-round set-to between Jackson and Choynski showed the former off to better advantage than at any time since his arrival here. There is certainly no local pugilist any more clever than Choynski, and his quick work forced Jackson to make some effort.
In an article on a match being made between Peter Jackson and George Godfrey San Francisco Chronical- 27 Jun 1888 (page 3) The bout between Jackson and Choynski was most good natured and a very clever exhibition of sparring. Jackson appeared in his by this time well known "singlet," as the Australians have it, and which, interpreted into United States, means a sleeveless shirt. Choynski appeared in regular ring costume, stripped to the waist, and showed himself through-out the four rounds an excellent and able boxer. Of course, the local man was no match for the Austalian, but he made a pretty exhibition. Jackson used only his left in leading or striking, and caused much merriment by his clever work.
Yep, that Chronical report was the one that I came across, Choynski had some resume, meeting Sullivan, Corbett, Jackson, Goddard, Fitz, Maher, Jeffries, Sharkey, Hart, Johnson etc.
It probably isnt the same exhibition but here is a good picture of Peter Jackson landing a left hook on Joe Choynski. https://trove.nla.gov.au/newspaper/article/120316348?searchTerm=jackson choynski 1888
