Where is the quote saying he will fight on May 5? Maybe I missed it. From what I'm reading, Manny doesn't actually say he will fight on May 5.

This is an interview from yesterday where he said he wanted to fight in late may, why has it been rehashed?

Nowhere in the article posted does it say he agrees to May 5th

He's not directly quoted as saying he'll fight on the 5th specifically, but the opening line introducing the quoted statement says he has agreed to it. Not ideal since it's not from his own mouth, but if it's his official website, then I believe the 5th is going to happen.

 

I was also looking for the May 5 quote form Pacquiao. It's not there. So it seems there's nothing to see here. Move along folks.
