Both were absolutely incredible offensive machines. Which had more offensive skill and ability?

Olivares by a wide and unimaginably vast margin

It's difficult to say, because they had different skills in that Olivares was probably better at delivering crushing combos in the pocket without necessarily eating much in return whereas Gomez had great movement that kept him out of trouble most of the time.

Odd, it seems I'm harping more on defense here, but the rest of it is kind of a wash to me. The ability to deliver their arsenals with relative impunity is about all that separates them.

Gomez didn't have one true punch ko power but his attacking style was reminiscent of a young Duran where he didn't stop probing for a opening via head feints , slips and superb footwork. Olivares was more of all action fighter , with impeccable fighting skills and devastating body punching and ferocious left hook.
Go will Olivares because proven against higher calibre of fighters and different styles.

How is Olivares more proven when Gomez has equal or better wins?

Also, Olivares wasnt an "all action fighter". You make it sound like the guy was Arturo Gatti.

There was alot of science to his approach.

Prime vs prime Gomez in my opinion. Before he became intoxicated by his knock-out power, Gomez was one of the most complete fighters I've seen.He was excellent with his feints, setting up his opponents beautifully. Used angles to his attack, and could slip and counter with the best of them. Had every punch in his repertoire and could hit with power with everyone of them.

It’s close. Olivares left hand was better whereas Gomez was stronger with the right. I think Olivares probably had more one shot power overall and hit better to the body but Gomez at his best may have been a little more dazzling.

Peak Gomez really doesn't lack much at all offensively. Very complete.
