Harada in the Rose fight. I think it was the 8th round, since he knew he was being outgunned. He just ended up putting everything out there for the rest of the fight. He even won later rounds because of it.

Holmes/Witherspoon, round 9. Larry was out on his feet for a few seconds, about to drop. He blitzed out of the corner and starting throwing right hands, which steadily increased in power as the round progressed. Before the end of the round he had apparently willed his legs back, rocking Witherspoon after being on the brink of actual stoppage.

Hagler-Hearns, round 3 after the ref indicated to Marvin that the fight might be stopped due to the cut he sustained. Instead of looking for a way out, he responded like a rabid animal and finished Hearns.

Ali vs Frazier #3 Thrilla in Manila, 14th rd, Ali on the verge of
giving up, dead tired, 13 rds of pure hell at this point.
Ali mustered up by pure will, a finishing attack as
brutal and precise as any earlier in the fight. Perfect
form, lead right hand after lead right landed on Frazier,
repeatedly snapping his head back. Frazier was blind
with swollen eyes, couldn't defend himself.
Futch in an act of absolute bravery and class stopped
the fight after 14 rds. Futch said it best "No one will
ever forget what you did today son". To Frazier.
Ali collapsed in pure exhaustion after the fight was
    stopped.
Both fighters should've quit fighting after this fight.
Neither would ever be the same again.

All the ones I would have said have been mentioned above. Another one that comes to mind that I just rewatched recently was Vassily Jirov throwing the kitchen sink at Joe Mesi in round ten of their fight. Jirov was behind on the cards and had Mesi badly hurt and was going for the KO. Thank god it was a 10 round fight or we could have had a real tragedy. Mesi had bleeding on the brain and his career was basically over after that fight.

    John Tate vs Mike Weaver,
Tate is supposedly the next Ali, he is undefeated
brimming with confidence. After 14 rds against Weaver,
he is very confident in his victory, and leading by a
wide margin on the scorecards...... The only way
he can lose is getting ko'ed in the 15th rd..........
Mike Weavers corner is in turmoil.
angry about Weavers uneven efforts during the
fight, they told Weaver to knock out Tate or don't
return, also reminded him his mother is watching
the fight... The 15th rd begins............
Tate is still in cruise control, winning the rd handily.
Weaver is trying though, fighting desperately.
Weaver maneuvers Tate back against the ropes,
he let's lose a short, sweet left hook with max
    leverage, nails Tate perfectly........
For a brief second Tate , froze, as if his body
wanted to fall, but his legs wouldn't let him.
The message from Tate head reaches his
legs and he falls face first. His 6'4" 232 Lbs
(He was possibly the 1st athletic "super heavyweight".)
body laying still on the floor. The ref could've counted
    to a 100......'

1979 is the year, The fighter is "Sugar " Ray Leonard.
Leonard, tired of the questions about his punching power
has "Bad intentions" on his mind, and is trying to prove
something. Factor in Andy Price all but guaranteeing
his victory and badgering Leonard since they signed to fight.
Price may be capable of this, he had already beaten Palomino
and Cuevas two future world champs with one becoming an ATG,
with possibly the hardest left hook in boxing history, Price is also on
    a winning streak, and confident.
    1st Rd begins,,,,,
Both men come out jabbing aggressively, both trying to "Impose
their will" on the other. The skill level of both men ,plainly evident.
With about 30 seconds left in the rd , Leonard lands a left hook, Price
staggers back to the ropes, Leonard then fires off a lead hook,
followed by a right cross this time. Price is clearly hurt and in serious
trouble, Leonard is unmerciful and viscous, in as little as 3 seconds
Leonard explodes with close to twenty punches all so fast its hard
to see what actually landed, and what didn't . It doesn't matter,
after he fell Price wasn't getting up anyway.
