    ... obviously its Toney, but really what does this mean?

    aka blocks punches with your face while not being paid a lot

    then other times it means guys with great subtle defensive and offensive moves

    is "old school" better than modern styles??

    I think there's an additional aspect, where someone can be old school by being happy to fight good opponents often, not petrified of getting a loss. Back in the day fighters fought a lot more often, and the records of people like Jack Johnson (who had 117 professional fights) often show them fighting the same opponents many times, with the best being the one who won most of these fights, not necessarily an undefeated fighter who would need several comeback fights if ever he lost.
