If a fighter is standing right in front of his opponent and then does a 180 degree turn in a split second as the opponent is throwing a punch and it hits him at the back of the head, resulting in the fighter going down, should it be called a knockdown, or an illegal punch at the back of the head?

Maybe, but Hopkins scored a good knockdown of Pascal and the ref called it a slip. So they cancel each other out.

 

No Hopkins didn't score any knockdowns. Hopkins never landed anything on Pascal...he actually pushed him to the ground while their feet were sort of tangled a little.
