Moving up and down can always be an issue, but it all depends on how much. Moving down have a very strict limit, so there is only a certain amount that is even possible before becoming zombified. Moving up is more open in limitation, but it doesn't mean it is not a great challenge, just that it is humanly possible. Well I agree nutritionists aren't perfect in their predictions, but supposedly coming in healthy should consist of no major physical changes which causes like you said punch resistance, drainage of power and stamina. It mighta been the case for RJJ including his old age and couldn't deal with the constant shifting in weigh. Although in RJJ's case because of his style if he loses any of his great attributes such as speed, reflex, power or stamina, it would be his downfall since he never had any real technical defensive abilities because he never needed it.
