The film we have means that Olivares should be favoured. He looks better than Ortiz does in the limited footage we have of him. But you never do know. Ortiz was very very great. Chucho beat Olivares by being exceptionally tough, staying with Olivares in the pocket and choosing his spots. Ortiz has all that and maybe a little bit more; my guess is that Ortiz was narrowly better than Chucho. Chucho cut Olivares of course and that was a key issue. Ortiz won't get that lucky I don't think. But these would be very tough, bitter fights closely contested. I suspect if they fought a series Olivares would win it - but without settling the dispute over which man was better, if that makes sense.
I'd put money on Ortiz taking one. But not two. He's going to come to Olivares and that's not a winning strategy.

I'd take Olivares in 2, once by UD and once by stoppage, and Ortiz one via brutal stoppage. The Ortiz win would be the most fondly remembered. I can just see Ortiz pinning Olivares against the ropes and unleashing hellish uppercuts
