Because size ≠ weight. Canelo outgrew 154 which isn't unusual in boxing. Some fighters fight their entire careeer at the same weight like GGG while others move up. Remember when Danny Garcia fought Herrera at 140 and struggled, many thought Danny lost and got a gift, Garcia realized that he was outgrowing 140 and the weight cut was too much and he moved up to 147 then to 154.

Another reason that Jermell Charlo fights at 154 is because his twin brother fights at 160 and if he campaigned at 160 then he could become a mandatory to his brother who he's not gonna fight. So it makes sense to skip over the weight class that his brother is in and fight at 168.

Yeah, did you watch the Castaño rematch? Quick feet, quick hands. Canelo is said to be flat footed, while Jermell was using a lot of lateral movement, working behind the jab against Castaño, and he plans to do more of that against Canelo.

Predictions often are wrong. The predictions were that Crawford Spence was a 50/50 fight then we saw what happened. No one expected a one sided mismatch. The opposite is happening here. Very few are giving Charlo a chance but we'll end up getting a much more competitive match.
