The taller guy has his chin in the air and only throws straight punches but can dodge punches pretty well which throw the shorter guy off.

Not easy if the man is skilled. I say straight quick punches and get your guard high quickly. Most fighters won't be able to counter once you land. The hook in many cases is the best counter punch to throw so watch for it if you miss. The other strategy is to keep busy! Throw 3-4 in a row and either back away on the last punch, or smother him up close on the last punch. Not so easy...
It was my worst nightmare when I boxed. I always tried to punch and not get punched. Ok, against guys like that, the second part is impossible if you want to achieve the first part. Once I read that vs guys like that you have to admit that his jab in your face is the first punch of your combination. That's a way.... but I still dont like this philosophy. One way than can work is to parry his jab with your right hand and AT EXACTLY THE SAME TIME jab his jab. This will help you to keep pressure on him. You will hit him while he's jabbing, so he cannot jab you, but he needs to jab you to keep you away, so you will hit him while he's jabbing... and so on. If you want to watch a master on this technique, watch ggg, he does it a lot. Difficult technique, though, that needs wonderful timing.
