I don't see the Cowdell and Ford fights as any evidence that he "fought to the level of his opposition." That's just something we see parroted here all the time, so many take it as gospel and continue the idea because they think they're supposed to. I really think those were close fights because of stylistic difficulties; those guys fought cagey, countering type fights, just the thing to cause a natural counterpuncher like Sanchez problems. If you came to him you were meat on a stick. There was no way to beat him like that. Back off a bit, jab, flurry, stay with him and use angles and you had a chance.
