They say the ''punch'' is the last thing to leave a fighter. Whats the first?

Reflexes x 10. You ain't goin nowhere without this. That's why past prime fighters gets KTFOed or outboxed.

Only if you rely on it heavily and it's a big part of your defence. Otherwise it's definitely the twitch fibres that erode first.

I think after reflexes might be the mental willingless to take a punch. These fighters may have the stamina to go at least ten out of twelve many times, but fear or hesitate throwing punches for some reason and fight more cautiously. It doesn't seem like stamina as much as it does a timid fear of making an error. DLH and Mosley against Floyd (sure Mayweather was countering them, but they'd lost before and never plain stopped throwing), Jose Luis Castillo on the Pac-Clottey undercard, Casamayor against Guerrero...All past-prime and simply not really active from the opening bell.

Reflexes are always the first things to go, assuming that the fighter hasn't 'let himself go' in terms of overall fitness.

Holyfield, Foreman and B Hop all had/have good stamina despite being old.

The better your fundamentals, the longer your career will (probably) be.
