Sometimes getting paired with a "noob" isn't the best thing for your progress. The way it works at my gym is the experienced guys go in with the new guys and go easy on them and only go as hard as they need to. That way you don't get 2 noobs going at eachother like a dog and a cat.
if its a decent gym as has already been said you should not be allowed to spar until you have a grasp of the basic's .also in regards to getting hurt (keep your bloody hands up) the people running the gym should and i would think will know the level of sparring partner you should be going in with ,sparring for you should be all about learning
31 is still fit to spar but conditioning exercises is a compulsory requirement like flex training, shadow boxing, upperbody weight training and etc...Will thicken your body with muscle and sharpen your brain to increase your reflexes.. ____________________________________________________________ This content is protected

There's two guy's at my gym who both must be nearly 60 and they both spar so i think you should be alright
