Who are some guys who did at least decently in the Olympics, but are much more well known in the pros for what they did to the point that their Olympic efforts are overshadowed or completely unknown?
Andrew Golota won Bronze in the 1988 Olympics under Ray Mercer and Baik Hyun-man.

Mate Parlov won gold but is better known as a short-term light heavyweight champ and fighting Marvin Camel to a draw in the first cruiserweight title fight (losing the rematch to make Marvin the first champ of that division).

Alan Minter won bronze and was a transitional middleweight champ, beating Vito Antuofermo and handing off the belt to Marvin Hagler (who wasn’t there to play tag).
