All of his big fights have something supremely impressive about them. So it's hard to pick just one.

AJ 1 - Sublime performance on the road in a stadium full of people looking to see him get smashed. Came out on fire and just put on a masterclass boxing performance. AJ was a deer in the headlights. Going into enemy territory, against a much bigger/stronger guy, and knowing you have to be damn near perfect otherwise they'll rob you on cards and you put in that performance? As close to perfection as you can come.

AJ 2 - Usyk is dealing with the war. Lost a ton of weight he had to gain back. Went in versus the best and most motivated version of AJ in his entire career. Took all AJ had to give in the 9th and then proceeded to beat the ever loving daylights out of him from 10-12. Just guts, determination, and class.

Fury 1 - Knew he was never going to get a decision over Fury unless he really stuck it on the fat man and made him hurt. Kept after Fury like a rabid dog, even when Fury was cracking him with uppercuts and putting him in some serious trouble in the mid rounds. Kept his composure, stuck to his game plan, made the small adjustments he needed to, and then beat seven shades of **** out of Fury down the stretch. Performed so well that even though they wanted to rob him they couldn't do it.

Fury 2 - This performance doesn't seem to get the credit it deserves. Fury came in even bigger so Usyk was at a SIXTY POUND weight disadvantage. Usyk didn't care. He just stayed with Fury for the first half and then turned the heat up on the back half. Cruised to a victory that left the Brits so flabbergasted all they could do was weakly **** and moan about the scorecards. This fight was Usyk just styling on Fury and showing him that he had nothing on him. Usyk is landing 3 and 4 piece combos to both body and head and Fury, despite claiming otherwise, ended up getting stuck in reverse for much of the fight because of it.

Dubois 2 - The "Usyk is pissed off and ain't playing around anymore" fight. Dubois, Don Charles, and Bricktop talked a mountain of **** and lies about Usyk ever since their first fight. Called him a cheat, a liar, an actor, and worst of all a fake Christian. Usyk had already figured out Dubois about 1 round in to their first fight, so this was just an exercise in humbling a young man and showing levels. Dubois hardly touched him over the 5 rounds, Usyk countered him brilliantly, and then once Dubois got tired and sloppy, closed the show with a picture perfect signature looping left hook. Oh, and his walkout to the ring should be in the dictionary under the definition of "aura."

I would probably think Dubois 2
Although the Fury and Joshua wins were great wins and maybe historically better, you sometimes have to look at what the opponents were doing before and after

In the 3 fights before Usyk
Fury before was facing Whyte, Chisora Ngannou
Joshua before was loss to Ruiz, Ruiz, Pulev
Dubois was facing Miller, Hrgovic, Joshua

    After the final Usyk defeat
Fury didn't fight for over a year and faced Makhmudov
    Joshua faced Franklin
Dubois went straight back in with a world champion and won another world title

With that I would think Dubois 2, but can see all other types of argument

    Fury 1

He had to stay committed to his gameplan at a point in the fight where it looked very grim for him like he had ran out of ideas

Dubois 2 easy, destroyed dubois even easier than the first time at 38 years of age. Usyk looked the most skillful at heavyweight against aj but he looked even more skillful than that against Tony Bellew and in reality his best win is Tyson Fury
