Yes, Vitali is still in very good shape. He exercises, rides a bicycle a lot (intends to ride 5000 km this year, for example) but to beat Joshua now..?

I voted AJ by KO, but I think that even a 40 year old Vitaly would beat up AJ. Joshua would have a panic attack at the stare down.
I see a Foreman vs Moorer type outcome. Vitali is older than Foreman now but is probably in better condition. Joshua is damaged goods and glass chinned (and eared).
