As far as I know Bryant Jennings has worked for many years 7 hours/5 days a week, don't know if he quit after Perez win.

Any other examples of old-timers and current boxers?

Nobody ever came closer to dethroning Michael Spinks at 175 than Eddie Davis. (However, it should be noted that was NOT over the championship distance.)

Eddie was famous for his adamant refusal to be dependent on boxing, working full time as a department store clerk throughout his boxing career.

In truth, not many boxing contenders of Eddie's era were able to make a decent living in the sport. One of the few who did before ever winning a championship was Albert Davila.

Carlos Palomino and Armando Muniz were the first two college graduates to ever square off for a world championship. Carlos was active in real estate during his career, but whether that can be defined as "full-time" in a 9-5 context like what Eddie Davis did is something you've have to ask Palomino. He may well be the first IBHOFer who was not dependent on boxing during the portion of his career which got him to Canastota however, and he achieved his goal of originally retiring before turning 30.

El Hombre has actually been fairly dismissive of the difficulty in acquiring his Bachelor's at times ("school only takes a couple of hours a day") although he has never left any doubt about how valuable his Bachelor's and Master's have been in his life, teaching high school Spanish and math for decades afterwards. You'd have to ask him though just how much he was doing with his background as a college graduate at the time he was making multiple world title challenges.

Gabriel Rosado worked full time at a Home Depot until later on in his career when he was finally able to dedicate his time to boxing full time.

Tommy Karpency worked as a nurse while boxing. After putting all his attention towards boxing he recently nicked a close decision against Chad Dawson
