At this moment financially Zuffa are probably offering great terms, because they want to monopolise talent and push out other promoters. If/when they achieve that, fighter pay, equitability and control will all plummet to levels not seen for a very long time, as they seek to exploit their monopoly and maximise profit at the expense of the fighters. In a way fighters signing for Zuffa today are enjoying favourable terms at the expense of future talent, who Zuffa will exploit and squeeze just like they do in the UFC.
