I was just thinking randomly about the blue and red corners in boxing. I have watched boxing all my life and have played FN Rd3 where you can choose which corner you can fight out of. In championship boxing, which corner is the champion and challenger assigned to. Is the assignment consistent (i.e. champion fights out of the red corner)? In addition, is the corner assignment consistent with the odds (i.e. the fighter that is thought or considered to lose the fight will be fighting out of the blue corner while the favorite is in the red corner)? I was wondering what everyone else has to say to this.

Nothing! Absolutely nothing . . . just to make the distinction of where the fighter should go after each round.

There's also no proof that shows that the champ goes specifically to the blue or red corner.

It is typically up to the promoter as top what the corner assignments are. Some promoters like putting the "top" side of the fight in the red corner, some prefer the blue corner.

The only time I have seen it really mandated is with tv contracts. HBO and Showtime both request that the "top" side of the fight be assigned to the red corner, and that the red corner is to be located on the farthest side of the ring from the main camera position.
