What is the definition of prospect in this case though?

Below age 25? Then 2-division champion Bam is still a prospect but Boots and the likes of Bruce Carrington are not.
Not having more than 10 career fights? Then 118 IBF beltholder Nishida 118 WBO beltholder Takei and 112 WBO beltholder Olascuaga are all still prospects.
Not having fought an active beltholder ever? Boots is a prospect but Bam/Nishida/Takei/Olascuaga are not.

Putting my personal definition of a prospect being age 24 or younger with 20 or less fights in their career OR age 28 and younger with 10 or less fights in the career (assuming they started late), and they haven't gotten a world title yet.
In that case I'd say the ones I'm following are Jin Sasaki (though he's about to graduate the status), Subaru Murata (unrelated to Ryota Murata), Hayato Tsutsumi (unrelated to Seiya Tsutsumi), and Yuta Sakai.

    It s the welterweight division.
No one has beaten anyone. He has however beaten several fringe contenders and top 15 guys and name fighters and mostly in impressive manner thus the ranking.Indeed it is also due to the limited competition between all of them mostly a eye test which is subjective but that s the game today sadly.
A prospect is Taylor Bevan who Matchroom recently signed.

Of the HW's Itauma, also keen to see how far Fisher may go but defo not as talented as Itauma.

Lower down in the weights, Curmel Moton looks a real handful.

If Tenshin Nasukawa can replicate the success he had in kickboxing we could be in for a treat.

Boots and Bam are not prospects, they are both champions and bonified threats to everyone in any division near them.

    Prospects:
Abdullah Mason (he's a hometown guy and he's really showing promise), Hamzah Sheerez, Keyshawn Davis and Andy Cruz as well. I'm also waiting for Joshua Edwards to turn pro.

Beyond them, there aren't really a lot of prospects I'm paying attention to. For instance I don't get the Curmel Moton or Floyd Schofield hype TBH

Not too many, a few older ones.

Anthony Joshua just lost his first step-up fight after a string of experience fights. I think he'll come again, just needs to rebuild and be matched properly, for example with fighters around 40 or non-punchers.

Daniel Dubious is one to watch. He lost a few early step-up fights due to having too much quit in him. But if you match him with people who can't take him to deep waters and he can land on easily, he's quite effective.

You dont even know what a prospect is.
    This is the definition:

A prospect is a promising fighter, often young, who is rising through the ranks with the intention of one day being a contender for a title.

Ennis is the no 1 welter in the world.Hence he isnt rising through the ranks as he has already done so.
