I think hattons head movement is just him going through the motions of moving his head, its not a cat like reaction to punches or even educated guesses at the next punch, just seems to be some generic learnt head movement and is very in effective Hamed had some great head movenment when he was under attack
It's worth checking out some early Floyd Patterson fights for prototypical Cus D'amato peek-a-boo style head movement. The great boxers such as Jersey Joe Walcott and Ezzard Charles were textbook fighters with excellent head movement as well.
