What's better.... a multiple weight champion or a long reigning undisputed champion?

A long reigning undisputed reigning World Champion. Sometimes a fighters body was not mean to carry those extra pounds on his frame, he sometimes loses power and stamina, not to mention it is hard on the human heart to carry excess weight. Sure it is admirable to win in different weight classes but I am sure it is better health wise to remain at a good normal weight for the frame that a fighter has. Duran for example, he won a World title at a higher weight later in his pro career, but he looked rather pudgy, he looked gassed in his later bouts, later to become a stepping stone for a future prospect. I am sure that it is more prestigious to clean out a division in the natural weight that you became champion. What do a handful of blood thirsty fans know about carrying 10 or 15 extra pounds on a body frame? Having to possibly fight 12 rounds with that extra weight.

    IMO long reigning undisputed champion.
I don't know what kind of P4P champion could overshadow e.g. Joe Louis (and please don't mention Floyd).

How much credit can you give a champion …who makes smaller opponents come up in weight to fight him ?

I personally believe…that every great fighter should be the underdog at least once in his career…..( I’m not just talking about Las Vegas betting odds )

I think quite often - in lower weight-classes in particulary - it's the other way around, it's sticking in one weight-class for entire career that can be damaging.
I think some fighters naturally outgrow the division, then also as You get older it gets harder to cut weight and rehydrate properly. Putting on extra pounds - to some degree - might in fact be easier option than sticking in single weight class for long.
