I'd say either Ray Mercer's ko over Tommy Morrison or David Tua's over John Ruiz.
I always think of Johansson vs Machen - which, thanks to horrendous refereeing, became even more brutal than need be!
Kenny Vice v Jim McDonnell was quite a scary one. You can see why the British authorities banned McDonnell from fighting again afterwards.
It's impossible to pin it down to one, so I'll just add some additional contenders:

Foreman-Cooney. Casual devastation at the end.
Gatti-Gamache. Not only brutal punches, but the way Gamache smacked his head on the ground.

What on earth was the incompetent referee doing, taking up the count with Dokes lying down on the canvas like a dead man? He could have counted to 100 and there still wouldn’t be any chance of Dokes waking up by then.
