Both Floyd Patterson and Henry Cooper always came across as ok fellas. As did Joe Frazier and George Foreman (2 nd version).
I wrote a very long list, I realised then that every boxer I can think of is basically a good person the exceptions are the nasty ones and the Steve Hearon category of folks.
My impression of Sam Langford from the books is that he seems warm, witty, Christian and impassive to the ugly aspects of his time and career.
Ezzard Charles Thomas Hearns Alexis Arguello Salvador Sanchez Evander Holyfield Manny Pacquiao Wladimir Klitschko Gennady Golovkin
With what’s at my disposal and from what I know of GGG he actually seems quite unsociable and prickly towards people. That’s my impression.
@ChrisJS has met a lot of great fighters that came across as gentlemen such as Felix Trinidad, Carlos Zarate, Carlos Ortiz, Eder Jofre, Fighting Harada.

Agreed. He was salt of the Earth, strong as an ox and everything you'd want your best mate to be. Michael Spinks comes over brilliantly in every interview. Gary Mason was a super nice guy. Michael Watson seems a real prince of a guy. Richie Woodhall. Class class act.
Many, many guys to name. To add to the list: Max Schmelling was always class. Same with Kenny Norton, Floyd Patterson, Foreman II, Chuvalo, Barney Ross to name a few. Even Liston had a good side. Frazier was OK, but IMO he spiled his good standing with his obsessive pettiness towards Ali.
