Dwight Muhammad Qawi. That was a modern classic example of the torch passing from an aging great fighter to an emerging great. In the alphabet era, a lot of prized prospects try to tackle the weakest beltholder to get their first championship, but Evander beat a legit Hall of Fame fighter in Qawi to become a world champion. If you're not familiar with Qawi, check out his footage. He had two wins over Matthew Saad Muhammad, he stopped Leon Spinks, Mike Rossman, and plenty of others.
Qawi is clearly the answer, so I would nominate his fight against Booze early in his career as a runner up perhaps...unfortunately I can’t find the fight on you tube or I would include a link.

Qawi.. It would have been interesting seeing him fight Cooper at cruiserweight, but it might have gone the same way as the heavyweight bout.
The Qawi fight was the pre steroid Holyfield, a draw in that fight wouldn't have been out of the question.
