Castillo. Floyd often praise his ex rival's ability to adjust. Also, i think JMM, Oscar, Followed by soon to be opponent The Ghost.
In terms of how they approached fighting Mayweather, I'll say Castillo and, out of left field, Jesus Chavez. They both worked off the jab on the way in and had (varying amounts of) success in forcing Mayweather into fighting defensively. Chavez, in particular, did a couple of sneaky things like hold onto the ropes to cut off May's avenue of escape once or twice. Castillo, especially in the first fight, pumped out a consistent jab, aimed it at the body so it had a better chance of scoring, and timed it pretty well to offset May's speed advantage. Both guys had success against FMJ; and it wasn't just because they applied a lot of pressure.
