How are we even purporting to measure the alleged increase in bar patrons' barfighting skills since Sullivan's day?

AFAIK, barfighting is not a regulated sport. There is no AAU manual or DVD coaching series of proper barfighting (or streetfighting) technique. Most famous boxers' "off hours" fights are not even on film.

Larry Holmes had a streetfight where he dropkicked a guy from a car. Another boxer, even. How often was Larry drilling the fight winning dropkick in the gym, do you reckon?
