    It's pretty casual but here's some I watch:

    Castillo vs. Corrales
    Ward vs. Gatti I
    Shane vs. Oscar I
    Toney vs. Jirov
    Brewster vs. Liakhovich

    Holmes vs. Norton
    Cooper vs. Holyfield
    Holyfield vs. Qawi
    Trinidad vs. Vargas
    Froch vs. Kessler I
    Cotto vs. Torres (not obscure but one of Cotto's best)

    Chacon, Mark Johnson and Carbajal fights as well.

    Here's a couple relatively obscure ones I revisit often:
    Cotto vs. Torres (not obscure but one of Cotto's best and awesome)
    Dominic Vea vs. Oscar Siale
    Cello Renda vs. Paul Samuels

    and I always liked watching Glen Johnson destroy Allan Green idk why. And Calzaghe over Lacy. And Mosley destroying Marg.

    a fight between a thai and another guy who might also have been thai, around 2002/4, maybe bw.
    duran leonard 1
    an undercard amateur fight for balham abc (fighting away, can't remember where) that should have been stopped then that guy won. was there to support my friend and never knew either guys name. a competent referee would have stopped it, was crazy.
    wilder fury 1.

    edit - a guy mentioned toney vs jirov. i got so hyped the first time i watched that. im'a watch it again right now.
