Anybody that's really been a skillful master at their craft honestly. I appreciate and love to watch them all. I have favourites, such as Joe Calzaghe stylewise, but it's too hard to just make a top 10 list, because I like to watch pretty much any 'elite' fighter do their best work, it's really thrilling to me watching these displays. Another two that stand out would be Kostya Tszyu and Sweet Pea Whitaker. The things I can't stand are Gatti type events and then of course the really old school fighters who look crap on crap film, don't enjoy that at all.
Mike Tyson Floyd Mayweather James Toney This is of course, when they're on their game and more entertaining, not fights like Tyson-Smith, Mayweather-Baldomir, Toney-Mccallum 2-3, etc... I like watching J.C. Chavez go to work and slowly break guys down to the body and head, such as his fights with Sammy Fuentes and Edwin Rosario. For great two-way action fights I like watching guys like Manny Pacquiao, Arturo Gatti, Matthew Saad Muhammad, etc.. I personally don't like watching Roberto Duran as much as many others. I love some of his bouts like his beatdown of Carlos Palomino or his first bout with Ray Leonard for example, but a lot of his fights are ugly IMO. I don't really blame Duran, it was often the fact that he was such a good in-fighter that guys would clinch him way too much. For instance, watching the first 12 rounds of the Ray Lampkin fight was seriously one dreadful experience. Up until the ending, that was one of the worst fights I've seen.
Dwight Muhammad Qawi. I loved his crouch defense, watching him make guys miss repeatedly, and then making them pay with a barrage afterwards. I remember seeing him make Holyfield miss like a dozen punches in a row.
Ali, Robinson, Joe Louis, James Toney, Sonny Liston & I watch the footage of Burley-Smith over and over. I've actually devoloped my own commentary.
