Hi all, so, I took a break from any training as we'd made an agreement to have no injuries for our wedding , then I got too used to sitting on my arse so found it hard to get back into things. Went to first Judo session last night and geez i'm broken! i'd been doing other arts but I've decided to have a complete change around and my current week looks like this: Monday: Off Tuesday: Judo Wednesday: off Thursday: Boxing Friday: BJJ 1-2-1 session Saturday: off Sunday: AM - BJJ PM - long walk with the dog. So, clearly gaps there but I don't want to end up overtraining either. What I struggle with is both muscle endurance and purely cardio capacity. One round of hard randori/sparring and i'm shattered. Anything I should be adding to training or purely carry on with the above and weight for results?

You didn't list your age and that will have some influence on what I'd recommend. At any rate I'd suggest using an elliptical machine at least three times a week. Keep it at moderate resistance and do two relatively long workouts, maybe on Monday and Friday, and then Wednesday do a shorter workout, maybe 20 minutes with high intensity intervals. Frank Shamrock really preached the utility of ellipticals, and its one of the best tools for weigh loss, increasing VO2 max, and integrity a variety of resisteances and intervals in. I think Mikey Garcia is heavily into the elliptical as well. It has all the benefits of swimming, but without the time investment required to master a variety of strokes. I do bjj 8/9 times per week (sometimes training twice a day) and I'm in my late 20s and the elliptical is awesome for avoiding injuries. There isn't as much impact so you avoid the injury bug, which is a looming threat as we age. It also gives a more complete and a more strenuous workout than cycling, which I also like.
