Orlando Salido as @drenlou mentioned is a true Rocky Balboa story. The guy went from being a low level Journeyman to a three time world champion.
I don't think most people know that Salido fought Marquez at 126 pounds on the De La Hoya-Hopkins undercard.
Marquez whooped his ass. I wonder how the Salido who welcomed Loma to the pro rankings would have fared against Marquez. Probably the same, but then again Mikey was struggling a bit with him.
Amir Khan after getting brutally stopped by Prescott. He went on to have a stellar career afterwards. I always thought he should have rematched Prescott though.
He may have done a little better as his confidence and self belief was higher, but once he started getting tagged with those counter combinations as he tired he would have folded again.

Not strictly a boxing 'comeback ' (even though he did lose his first pro bout), more a life comeback... I was always impressed with Bernard Hopkins. As mentioned previously, Foreman has to be up there - and Glen Johnson for overcoming the journeyman tag and becoming the man at LH for a time.
