You should learn about them you’re getting a watered down experience I’ll take the time to write you a quick list of fighters to watch if you’d like.

    Archie Moore (before HW)
    Sugar Ray Robinson
    Carmen Basilo
    Jose Napoles
    Henry Armstrong
    Buddy McGirt
    James Toney
    Gene Fullmer
    Sugar Ray Robinson
    Barney Ross
    Rodrigo Valdez
    Ruben Olivares
    Alexis Arguello
    Sugar Ray Leonard
    Dwight Qawi
    Jake LaMotta
    Fighting Harada
    Julio Cesar Chavez
    Armando Muniz

This is a good mix I think and all of them are pretty exciting to good most of the time.
Lots of these guys have a lot of cross over to different eras with a reasonable amount of film.
it will expose you to plenty of great opponent boxers you might want to further your education of.
If I had to pick and I started over I’d go with Carmen Basilio vs Sugar Ray Robinson first or Jose Napoles vs Armando Muniz and pick one of those four from two of those fights to explore.

Heavyweight: Holmes = Holmes is a good choice other good candidates are Holyfield or Liston.
Cruiserweight: Usyk = Usyk is a good choice again Holyfield is also a good candidate.
Light-heavy : Charles = Charles or Moore are solid picks.
Super Middle: Canelo = I'd go with Toney instead of Canelo.
Middle: Hagler = Any of the top 5 Middleweights would be good candidates Hopkins, Hagler, Monzon.
JMW: McCullum = Another good canadidate Winky Wright but i think McCallum is the best answer honestly.
WW: SRR = There's no footage of Robinson at Welterweight so i'll go with Napoles or SRL.
LWW: Mayweather = I'll go with Benitez.
LW: Duran = Nothing to add here.
JLW: Arguello = I'll add Mayweather for Super Featherweight
    FW: Sanchez = Agreed
BW: Jofre = I really like Orlando Canizales he had no real glaring weaknesses in his prime.

For fighters below these weights i'd add fighters like Miguel Canto, Ricardo Lopez, Naoya Inoue, Roman Gonzalez, Mark Johnson, etc.

The version of Muhammad Ali that fought Zora Folley in 1967 I would take against ANY fighter pound for pound in ANY weight class! (And to think he still hadn't reached his zenith as yet--astounding!!)
