To give a condensed version, Victor lied about a lot of **** to make it seem worse than what it was and to do that he left out and flat out lied about the role in what others did to help him.
There is a measure of truth in everything Ortiz has said. The problem is though, the measure of truth gets less and less with each telling of the story.

Ortiz has an older sister that became his legal guardian when she was 18. She helped him and his brother out when they were young. Of course 24/7 just acts like she doesn't exist during the build up to the Mayweather fight to dramatize how hard Victor's life was and exaggerate his underdog story that average joes and hoes fall for. Strangely, his sister was happily at the weigh in supporting him after they pretended she didn't exist going into the fight. He also has a blind younger sister that no one knows about.

Really, I don't see it going any different than when they were kids sparing. Rios kicks Ortiz's butt anywhere anytime. Ortiz really does not like getting hit and wants to quit when he does. Rios gains strength from it and just fights harder.
Not the first time they put plenty of fiction into a fighter's life story. manny pacqiuao did indeed have an amateur boxing career, and had his room/board paid for by them. All of this is brushed under the rug to better sell him
